Gracie's Family's Favorite Cheesecake
This recipe came into our family over 40yrs. ago. Though we also make the tradtional baked cheese cakes, this still continues to be our family's all time favorite. I have 6 siblings, married with children and grandchildren. We are having a family reunion June 15th and someone is sure to include this cool, lemony treat.
Lemon Refrigerator Cheese Cake
1 small box lemon jello
1 cup boiling water
dissolve and cool until it resembles egg whites in consistency. Place 1 regular size can evaporated milk in metal bowl and place in freezer until ice forms on sides of bowl. Whip until stiff 3 8oz. Cream Cheese, 1 cup sugar, 1 tsp vanilla, optional 1/2 tsp Rum extract. Beat with mixer until creamy and sugar is dissolved stir the jello into cream cheese mixture, then fold in whipped milk. Graham Cracker crust is used . This recipe will fill three 8 inch Graham Cracker pie shells.
If you are making your own crust I suggest sweetening with pd. sugar, it packs better than regular sugar, and I also melt the butter. I freeze the crust before adding the filling. it keeps firmer and serves better if crust is frozen first. This is a keeper and taste just as delicious several days after preparing if your lucky enough to still have some.
