Kathie Lee's Mom's Jambolaya
Why not try this at your next sports gathering? Served with a nice crisp salad, it makes a tasty change from the usual fare.
Jambolaya
1 pd. turkey or regular Italian sausage (links)
1 pd. chicken breasts
Saute in small amount of olive oil, and then slice turkey into small bite size pieces. Cut chicken into bite size pieces. Put aside. In skillet put 1 tbls olive oil. Saute 1 cup chopped onion, 1 cup chopped celery and 1 red and 1 green pepper chopped. Into 3 quart pot, add all the ingredients listed above. Add 6 cups chicken broth, 3 cups long grain rice, 3 cloves sliced garlic, 1 tsp. salt/red pepper/paprica, depending how hot you like it, 1 tsp. tabasco sauce. Cover and bring to boil, turn down to simmer 20-30 minutes.
Note: you can take out one of the cups of chicken broth and in it's stead, use 1 cup of chopped tomatoes with juices. This gives it a more tomatoe flavor.
