Kathie Lee's Mom's Pork and Sauerkraut
4 to 6lbs. Pork Loin
1 16oz. Can or package sauerkraut (My mom prefers Libby's).
Put in a 9x13' roasting pan, FAT SIDE UP
Sprinkle with Garlic Powder/salt/pepper
Bake at 325 uncovered. Use a meat thermometer. You don't want to over cook pork. It will dry out.
When it is done, remove the meat and cover with foil.
Stir the sauerkraut into the pan drippings but only with a little of the juice.
Place back in the oven and cook for appx. 35-40 minutes until it is brown.
Serve with creamy mashed potatoes (this is a MUST).
