Michie's Sweet Potatoe Souffle
2 1/2 to 3lbs. yams cooked and peeled
2 eggs
3/4c. brown sugar
1/2 melted butter
1 tsp. salt/cinnamon
1c. pecan halves
orange juice up to 1c.
Mash cooked yams. If the potatoes seem dry, slowly add the orange juice until they are moist and fluffy. Beat in eggs & 1/4c. brown sugar, 1/4 melted butter (notice the measurements), salt and cinnamon. Put into 1 1/2 or 2qt. casserole bowl. Before baking, arrange pecans to encrust the top completely. Sprinkle with remaining 1/2c. brown sugar and drizzle with remaining 1/4c. butter. Bake uncovered at 375 degrees for 20 minutes or until you see a slight bubble.
The wonderful thing about this receipe, besides tasting incredible, is that it can be one dish made a head of time.
